defragmentation of a hard drive is taking all the fragmented files and placing them back to either where they belong , or where they are optimal. After a while, the files and shit on your computer get re-arranged and placed on different sectors and clusters than they should be, making the seek time for that particular file high, slowing performance.

Truth is, there are no programs out there to show you everything you've done on your computer. You can un-erase files... once you "delete" a file, it isn't really deleted. It's just removed from the master boot record and is no longer indexed. So EVERYTHING you ever did on your computer IS still there, but things like history, cookies, temporary files etc. are almost impossible to get to, unless you know excatly what your looking for and where to find it. Norton Utilities has tools to re-index "deleted" files. Also there are advanced Forensic Investigation tools that you can use to retrieve anything indexed and non-indexed, but they're all console, and you would need to learn alot before using them.
