Anything less than 2.75 is good for flat.  I'm running my set-up at around 2.2 and it is so easy to pedal away when I hit the pedals and I'm leaning ready to fall.  I know if I ran anything bigger I would fall instead of pedal away.

as soon as my new sprocket comes in and my new rim ill be running a 2.27 ratio for street i dont think ill have much of a problem other than maybe getting higher speeds but other than that its all preference id say if i want ill buy a 9 tooth cog to make it harder

Don't you mean lower speeds?  The closer the ratio is to 1:1 the faster you will be spinning your cranks, and the slower top end speed you will have.  2.75 is the "average", and you are going to 2.27, which is a smaller ratio.

I'm riding 2.5

I'd stay away from a mosh sprocket, the center hole on mine wasn't centered so the chain was loose then tight depending on where the crank was in it's rotation, which made it suck setting it up. I have an animal now, MUCH higher quality, and something I'd recomend.
